  • 3 large eggs
  • 1 cup vegetable oil (or half applesauce)
  • 3 cups all-purpose flour
  • 3 teaspoons ground cinnamon
  • 1 teaspoon salt

  • 1 teaspoon baking soda
  • 2 cups grated zucchini
  • 1 cup diced apple
  • 1 cup chopped walnuts

Instructions

  1. Preheat oven to 325°F (163°C) and grease two loaf pans.
  2. Grate zucchini and dice apples; set aside.
  3. In a bowl, combine flour, cinnamon, salt, baking powder, and baking soda.
  4. In another bowl, whisk eggs, oil (or applesauce), vanilla extract, white sugar, and brown sugar until smooth.
  5. Fold wet ingredients into dry ingredients until just combined; avoid overmixing.
  6. Gently fold in grated zucchini, diced apples, and walnuts.
  7. Let the batter rest for about 5 minutes before pouring into prepared pans.
  8. Bake for mini loaves for 35–40 minutes or full-sized loaves for about 55 minutes until a toothpick comes out clean.
  9. Allow bread to cool in pans for approximately 20 minutes before transferring to wire racks.
