  • ¼ cup pumpkin seeds
  • ¼ cup shredded coconut (plus extra for rolling)
  • 1 Tbsp honey or maple syrup (optional)
  • ½ Tbsp lemon juice
  • Zest from a fresh lemon
  • ¼ cup dried cranberries
  • ¼ cup peanut butter

Instructions

  1. Gather all ingredients and measure accurately.
